I’ll bet that’s not something you usually hear in the same sentence: Mexican food and losing weight! I have good news for you: I intend to teach you how to make delicious and healthy versions of all your favorite foods. I invite you to follow me for a few months and learn more. I’m betting you will be extremely happy you did so.

With the right ingredient’s you can actually enjoy flavorful greasy cheesy mouth-watering meals while you lose weight and put your hormones, gut, and thyroid back into overdrive– like they were when you were young.

For this delicious meal, we use only fresh organic vegetables. The amazing health benefits in the organic avocado are unique in that it is the only fruit that gives you a powerhouse of healthy monounsaturated fatty acids and 20 natural vitamins and minerals. Also, note that avocados do not contain sodium or cholesterol.

Organically grown tomatoes are loaded with all sorts of vitamins and minerals such as vitamin C, K, beta-carotene, niacin, vitamin E, B6, folate, and phosphorus. Tomatoes are also a very good source of dietary fiber, copper, manganese, and potassium.

As for the folks who just need a few chips with their salsa, these are made from organic brown rice tortillas. And although there’s not a ton of nutrition in them, they will give you the snap and crunch you need (and they even come in gluten-free for those who have that concern).

My super high protein chicken burrito starts with a whole-wheat organic wrap and grass-fed chicken which is very slowly cooked in a frying pan with natural lard or coconut oil. The burrito is stuffed with tomatoes, peppers (habanero if tolerable), and onions–choosing all of these from an organic source, loading your body with lycopene, zinc, magnesium, vitamin C, capsaicin and beta-carotene.

Top all of this with raw unpasteurized grass-fed cheese and a sprinkle of unrefined pink Himalayan salt.

Does this sound more like a vitamin store than a delicious meal? When you use real unprocessed ingredients, this kind of food will actually reduce disease-causing inflammation and supply your body with total nutrition, not to mention the flavors most of us have not had for a very long time.

Healthy Burrito

Ingredients

  • 2 tbsp coconut oil
  • organic whole wheat tortillas
  • 1 grass-fed chicken breast or 2 tenders cooked
  • 1 organic red bell pepper (for a stronger version use 1 organic habanero pepper)
  • 1 organic sweet vidalia onion
  • 1 organic local or home-grown tomato
  • 1 organic avocado
  • 1 c raw unpasteurized grass-fed cheese of your desired flavor
  • organic brown rice tortilla chips-slightly salted (pink himalayan) and oven browned

Instructions

  • Heat 2 tbsp coconut oil in a skillet and grill onion, peppers, and shredded chicken. Sprinkle with a few shakes of my dry Mexican seasoning (recipe follows) and cook until tender.
  • Spoon 1/3 c. chicken mixture and a few spoonfuls of chopped tomato into each tortilla and roll.
  • Place the filled tortillas in an oiled casserole dish. Pour on the sauce and top with grated cheese.
  • Bake in 325-degree oven until cheese is bubbly and melted.

Notes

Serve topped with slices of fresh avocado and with a side of organic brown rice tortilla chips and homemade guacamole. Enjoy without guilt!!

Enchilada or Burrito Sauce

Ingredients

  • 1 tbsp coconut oil
  • 2 cloves minced garlic
  • 1 chopped serrano or jalopeno pepper
  • 1 1/2 c tomato sauce
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1 c homemade chicken broth (all store-bought broth has hidden chemicals)
  • salt and pepper to taste (always choose himalayan salt)

Instructions

  • In a saucepan melt the oil on low heat.
  • Cook the garlic and pepper until soft.
  • Add remaining ingredients and bring to a boil. Reduce heat and simmer 10 minutes. Set aside until ready to use.

Mexican Spice Mix

Ingredients

  • 2 tbsp onion powder
  • 2 tsp garlic powder
  • 1 tbsp Himalayan salt
  • 2 tsp chili powder
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp red pepper flakes

Instructions

  • Mix all dry powders together and store in a covered jar. Use for all recipes calling for Mexican spices.

Homemade Guacamole

Ingredients

  • 2 avocados
  • 1 lime
  • 1 tomato
  • 1/4 one small onion
  • Mexican spices

Instructions

  • Mash 2 fresh avocados with juice of one lime and stir in the following: a few tablespoons of chopped fresh tomato, a few teaspoons of minced onion, garlic, and Mexican spices to taste.

Believe it or not, fried chicken the John Rankin Way is very healthy…contrary to what we’ve been led to believe for the past 50 years that all fried chicken is unhealthy and causes heart disease. That propaganda is just totally false. And by listening to untrue so-called scientific data, Americans have become not only fat and sick from eating processed foods but also malnourished from the lack of Mother Nature’s healthy foods.

These deceiving kinds of scientific data came into the marketplace at the same time we were told (by the same mad scientists) that processed sugar was healthy. This was also the time when processed sugar began to be added to everything from ice cream to toothpaste. We have been told for decades to not eat saturated fats–that they were unhealthy. Not true. The only unhealthy thing about fried chicken is that most of our sources come from restaurants where they cook the fried chicken in trans fats.

Most of us are unaware of the very simple fact that when a restaurant cook turns the fryers on in the morning using so-called non-trans fat oil, this oil quickly becomes trans fat. These vegetable-based oils become toxic in a couple of hours under the highly intense boiling temperatures.

Everyone should know that you can ruin the very best cold-pressed oil and turn it into trans fat in just a few minutes by adding extreme heat. But most of us have never learned that very important fact.

I personally fry my chicken in home-rendered lard made at low heat from the fat of a healthy pig. Then I keep the frying process to low temperatures. Hear me out folks. Lard has only been vilified because of the refined cooking oil mega giant fake food industries and their greed for money. Something that you probably don’t know is that lard has LESS saturated fat than coconut oil or olive oil. Lard is loaded with oleic acid–the same thing in olive oil that is so healthy for us. In my professional opinion (and others) lard is probably the second highest source of vitamin D on the face of the earth– sunshine being the highest.

The flavor of foods cooked in lard are out of this world. Why do you think most great chefs add pork fat to their beans while cooking instead of a processed oil from a can? Lard has been used for thousands of years prior to anyone ever having a clogged artery.

Healthy non-inflammatory oils do not clog arteries! Inflammatory oils do!

Now do not run out to your local grocery store and expect to find lard– even though some specialty stores sell it. BUYER BEWARE! Most of these stores sell a ‘hydrogenated’ version which equates to being processed with high temperatures—again this equals trans fat.

Every farmer’s market in America sells healthy pork fat or knows someone who does. I will post an article very soon and show you how simple it is make it.

WHO LOVES RAINBOW TROUT?

I do! And you should too! And for a very good reason!

Besides the fact that trout costs only a fraction of what the most popular fish (salmon) sells for, it is also loaded with omega-3 fatty acids—with one of the highest amounts in any freshwater fish.

It is closely related to salmon. Just a small 3 oz. serving of trout supplies your body with 22 healthy grams of protein.

This small delicious piece of fish will also supply your body with about 40% of the daily recommended amount of protein which helps to create a healthy mind and body.

HOT PEPPERS (CAPSAICIN) OR AS I LIKE TO REFER TO THEM “SKINNY PILLS”….that’s right, skinny and healthy. Isn’t that the magical pill we are all looking for? Well folks, look no further. How would you like to have a thyroid that is on fire? A huge boost in your metabolism? Less body fat? All by eating just one food? How about a food that will lower your blood pressure? How about another food that will metabolize insulin levels, protect you from having blood clots and eventual strokes and heart attacks? How about even another food that will actually stop and reverse erectile dysfunction and give men the stamina of someone much younger in age–all within 3 to 6 months? Most of the folks I speak with from these countries are very lean and extremely healthy at any age. Most have never been sick at all. Most also tell me that the food in America is terrible and is making them fat and sick. That’s another whole big story of it’s own.

The chemical compound in peppers known as capsaicin is what gives peppers it’s heat. They are loaded with vitamin A, B-6, C, potassium, niacin, folate and B-2. Peppers are extreme antioxidents that kill free radicals in the body and reduce inflammation. No inflammation=No Disease.

Also Peppers have an anti-platetet sticking compound. According to numerous university studies, peppers will prevent blood clots from forming in the bloodstream. Researchers have found that something as simple as eating hot peppers can reduce cancer cells from growing in the human body. Human studies are resulting in cancer cells dying in breast, lung, prostate, and other cancers. These studies are real folks. Just ask your Asian or Middle Eastern friends how many of their parents or grandparents have had cancer or heart disease. Most of these countries have about 1/10th of the disease that American’s have. And those from those cultures who have disease have partially or fully converted to the fast-food-chemical-laden processed-not-real-foods-American diet.

Eat peppers and I promise you will be pleasantly surprised. It has become a daily staple of mine and rightfully so. Besides the very true fact that it has lowered my blood pressure to a healthy teenage level of 115/70 and lowered my body fat from 18.5% to 11.5%. And as for the manhood thing…..well you men will just have to find out for yourself…or not. But trust me, you will only hate yourself if you don’t give it a try.

Peppers have a thermogenic effect and create natural endorphins that will last 1 to 2 hours. It’s better than any caffeine you have ever had–without the headache and blood pressure rise. In other words, the healthiest high you will ever have. And yes for that reason it is very addictive. I personally am addicted to this effect. But not to worry, it’s one of the healthiest most natural addictions you will ever have or want.

Try some today on your favorite dishes. Peppers are great on foods like fish and brown rice. I use it on every meal. Word of wisdom: start slow and work your way up. You most certainly do not want to get discouraged and stop using it before you see all of the wonderful health benefits. Wake up America! Rankinshire Chocolate Cake

This cake is delicious and healthy, but that doesn’t mean you can eat the whole cake in one day! Remember it can still have an effect on insulin levels, the pancreas, and the liver. All-natural foods are most wonderful and safe but we must always eat them in moderation or they can actually have less than healthful effects on our body.

Ingredients

Cake

  • 3/4 c coconut flour
  • 1 tsp fine grain Himalayan salt
  • 1 tsp baking soda
  • 1/2 c unsweetened cocoa powder
  • 9 large eggs
  • 1 c melted coconut oil
  • 1 c pure 100% maple syrup

Ganache Frosting

  • 2 tbsp melted coconut oil
  • 2 tbsp cocoa powder
  • 2 tbsp honey
  • splash of vanilla

Instructions

Cake

  • Preheat oven to 350°F grease a 9-in cake pan or cupcake pan with coconut oil or use cupcake liners.
  • Mix together coconut flour, unrefined salt, baking soda, and cocoa powder in a small bowl.
  • In a larger bowl mix together eggs, cooled coconut oil, and maple syrup.
  • Add the dry ingredients and mix until smooth.
  • Pour into prepared pan and bake for 30-35 min for cake and 25 for cupcakes, or until a toothpick inserted into the center comes out clean.

Ganache Frosting

  • Mix together and allow it to cool until it starts to thicken slightly then pour over cake.

But butter makes you fat and causes heart disease! Wrong!!!

The mega-giant fake food companies would love for you to believe that decades-old myth, which was invented by none other than the food companies themselves. Many ‘studies’ in the 1960’s vilified real butter as being the cause of clogged arteries and heart disease. These studies were done by their own hired mad scientists. Many studies done by independent scientists actually prove just the opposite. Add to that the fact that countries who eat fresh butter daily have 1/10th the heart disease as American’s. Do the math!

These studies prove that saturated fats do not cause blocked arteries. Clogged arteries have been proven without a doubt to be caused by inflammatory trans fats and sugars. These studies go all the way back to 1957.

Processed sugar, hydrogenated oils, and refined carbohydrates are the real reason we have heart disease in such mass numbers in America!

The only difference in the 2 kinds of butter pictured above is that one was produced in May on green grass and the other in August when the grass was dry. Both kinds of butter were produced from the same cow and are very healthy, but the dark yellow one has many more cancer-killing nutrients.

I personally purchase my butter for the whole year in the months of May and June and freeze it to use throughout the coming year. Frozen butter thaws beautifully, even many months later.

Before you head to your local grocery store this spring and buy a year’s worth of butter, be absolutely sure of what you are purchasing. BUYER BEWARE! Like any other product, all butter is not created equal. Due to the methods of production and lack of quality concern, I wouldn’t trust most processed butter made in America. But there are a few that are shipped in from places like New Zealand and Ireland that are fairly trustworthy because of the high dairy standards they have in those countries. Some are grass-fed but are pasteurized–not perfect but better than most. The best option, of course, is to buy from a local dairy farmer who raises his cows on grass and doesn’t pasteurize the milk before making butter. But if that is not an option, there is one product in stores I would recommend: KerryGold (made in Ireland).

NONE OF MY ANTI-INFLAMMATORY ‘MEDICINE’ IS AVAILABLE AT ANY OF THE 67,000 AMERICAN PHARMACIES!!!

Why would we need 67,000 drug stores you ask? No, that’s not a misprint–it’s just a SICK fact!! Most of us can remember a time in our lives when only one drug store would service a whole community. Each section of town had one small independently owned drug store.

I also remember at that same time it only took one person to work the entire pharmacy. You could also get a prescription filled in around 8 minutes. Today it takes a minimum 1/2 hour from a staff of 5.

Thirty years ago when drugstores starting popping up on every corner our first thought was to assume it was nothing other than big business taking over again. Most of us just assumed it was about money.  Oh, it was!!  We just didn’t have a clue how much money and what else was coming.

The pharmaceutical companies saw it coming. The WWII generation was retiring and 76 million baby boomers were becoming middle-aged. Remember the WWII generation is the one where folks smoked filterless cigarettes and drank hard liquor most of their sick lives. And then their 76 million kids came along who were nicotine, drug and alcohol addiction dependent before they even left the womb. These same helpless children have now spent their entire lives consuming lethal doses of chemically processed fake food. Are you starting to get the picture folks?

Almost everyone we know is consuming at least one prescription drug on a daily basis. 76 million innocent sick people = a drug store literally on every corner of America. America spends 2 1/2 times more on healthcare than any of the wealthier industrialized countries. We are also the sickest country amongst them. Why you ask? Because we keep consuming the newest best drugs that are certainly going to cure us of any disease that comes along. How do we know this? Because television commercials and magazine ads tell us so!

Well let me ask you just one question, how’s that working for you? So if an ad tells you which car or appliance to buy, do you run out and purchase it?  I hope not. If you do, then you are easily marketed and not making healthy decisions for yourself.

It’s time to wake up America and face the music. Not to worry, the music you need to face will actually be quite a pleasant surprise when you receive your next blood test results after simply changing your diet.

My suggestion:  start a garden and get to your local farmer’s market fast. Eat fresh naturally grown food from God’s green earth and I really don’t need to tell you what happens next.  Follow my guidance and you will discover the good news soon enough for yourself!

Blueberry Muffins

Ingredients

Batter

  • 3 c almond flour
  • 1 stick softended unsalted butter
  • 2 eggs
  • 1/2 c honey
  • 1/4 c maple syrup
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tbsp vanilla
  • 1 tsp coconut extract
  • 1/4 c milk
  • 3 c fresh blueberries (added separately)

Crumb Topping

  • 1/2 c almond flour
  • 1/4 c coconut sugar
  • pinch of salt
  • 3/4 tsp cinnamon
  • 1/2 stick melted unsalted butter

Instructions

Crumb Topping

  • Stir ingredients together with a fork.

Batter

  • Mix all the batter ingredients with a hand mixer until incorporated.
  • Stir in 2 c. of the fresh blueberries.
  • Spoon into about 18 muffin cups or for cake use a buttered 9 x 13 casserole dish or several individual ramekins.
  • Top with 1 more cup blueberries and crumb topping.
  • Bake 350 for 60 minutes (+/-).

Notes

Cool slightly before eating or storing.

FLAXSEED IS FOR EVERYONE!!!

I say this because most people I speak to have the impression that flax is just for old sick people. Not so folks. Not eating flaxseed is equivalent to not drinking water–in my opinion.

Flax is one of the healthiest omega-3 fatty acids on the face of the earth and a pure rich source of fiber for your body.  It is what linen (linseed) is made from and is grown in cooler environments and especially around the Canadian Rockies.

Flax has been used for healing purposes in humans dating back thousands of years.

Just 3.5 ounces of flaxseed has 27.3 grams of fiber, 18.29 grams of protein and 42.16 grams of healthy saturated fat.  All that in these tiny little seeds!

Flaxseed has very high levels of thiamine (B-1), magnesium, iron, calcium, zinc, phosphorus, B-6, and moderate levels of niacin, folate, potassium, iron, riboflavin, and vitamin C.  As you can see flaxseed is loaded with heart-healthy and thyroid boosting saturated fats, B-vitamins and enough fiber to last you all day.

I personally consume between 2 and 3 tablespoons of flaxseed daily. Because of its great fiber content it is a wonderful ally for weight loss. It will fight cancer and heart disease and help you to reduce your cravings for processed sugar.

Studies also prove that flax reduces your total and LDL cholesterol levels. Because of its rich source of omega-3 fatty acids it has also been proven to help metabolize your thyroid and bring it back to a healthy level it once was.

Flaxseeds are also without a doubt the very best source of lignans on the planet.  Lignins are polyphenols found in fibrous plantlife foods like beans and fruits and vegetables and assist in bone structure.

The digestive health benefit that you receive from flaxseeds is unequaled from any other source. There is just no reason that any human should ever be bothered with constipation or digestive issues with flaxseeds at their disposal.

One of the most obvious reasons to add flaxseed to your daily diet is that it has been well documented to help with obesity.

So again no, it is not just for old sick people. However, it might just help keep you from getting old and sick!

I speak to people every day about flax and some have never even heard of it.  Some of these people are body-builders I meet in the gym on a daily basis, many of whom have actually laughed at my reference to flaxseed.  Most of these uninformed folks are usually drinking some sort of colored sugar water with claims to having electrolytes and body-building ingredients in it.  Mmm, BUYER BEWARE!  As a body-builder, you most certainly want to add ground flaxseed to your breakfast or smoothie before heading to the gym for maximum muscle growth.

You can sprinkle flax over your salad or put it in your nightly yogurt, but never use it in baked goods.  The omega-3 oil in the seed is the healthy part. When the seeds are cooked it dries the oil and certainly kills the anti-inflammatory punch that it has.

To be effective in the human body flaxseed has to be ground so I personally use a cheap coffee grinder to make it into a smooth powder before use.  (Only grind a day or two’s worth and put it in a seal tight jar and store in a dark drawer of the refrigerator).

I prefer the dark brown seeds over the golden seeds for their flavor and better digestive assistance.  I also give them to my chickens!  A flaxseed-fed chicken will produce an egg with as much omega-3 fatty acid as a 4-6 ounce piece of wild-caught salmon!  (Not to mention the coveted flavor of such eggs).

PURPLE POTATOES:  who eats them?  Well for one extremely healthy people like me do–as well as the people on the island of Okinawa who eat them as a daily staple–with amazing health benefits to show for it!

Most of us have seen purple skin potatoes but most folks have never heard of potatoes that are purple internally. There are a few varieties–grown in America and in Japan and other parts of the world.

Most people who I show them to make the comment that they are pretty. And yes actually there is a whole lot of pretty in these super healthy antioxidant potatoes.

You may wonder why someone would want to eat potatoes every day of their life. Let me explain something here. A study that was done in 1995 noted very low mortality rates from cancer and cardiovascular disease in people from Okinawa.  At this time those folks were eight times less likely to die from prostate cancer, seven times less likely to die from breast cancer, three times less likely to die from colon cancer, and eight times less likely to die from cardiovascular disease than Americans. Are you getting convinced yet?

The mortality spread was even wider back in the 1950s and beyond as Okinawans had not been exposed to Americanized processed foods at that time.  Since the 1950’s and 60’s they have wandered away from the purple potato and substituted more rice and bread.  Their stats are going to show this bad decision soon.

The island of Okinawa is one of the few places on earth that’s held the record for folks living to over 100 years old. Purple potatoes surely couldn’t have been what was making these islanders live over 100 years old, you say.  Yes, it most likely was.  The native diet of these islanders consists of 30% vegetables, a small portion of fish and brown rice, the purple potato, pork, and probably a little sake.

Yes, all of their staple foods are very healthy but let’s take a look at the purple potato in particular. We are all aware of the high antioxidant level of blueberries and how they heal our bodies.  Well, picture this:  a purple Japanese yam is loaded with the antioxidant anthocyanin and has over 150 times the antioxidant that blueberries have. The antioxidant in purple potatoes is also the pigment that makes grapes and blueberries purple. Convinced yet?

My favorite way to cook them is to slice them thinly and fry them in coconut oil on very low heat and seasoned with pink Himalayan salt. You can put the lid on for a few minutes to allow some steam to cook them through, then let them crisp up a few minutes with the lid off.  When cooking with this method be absolutely sure to keep the heat at a lower range and take them out of the skillet as quickly as possible when they are done. These potatoes are very delicate and will burn easily at higher temperatures and will be soggy if the heat is too low.  You might want to practice it more than once before you give up as these potatoes are not only one of the most powerful anti-inflammatories that you can put in your body, they are absolutely delicious.

A safer or more fail-proof way of cooking them is to cut into 1-inch squares, lay on a cookie sheet covered in aluminum foil, drench with melted coconut oil and add pink Himalayan salt and maybe a dash of cinnamon and bake at 275° for approximately 20 minutes. (I never ever ever ever cook real food in the oven at over 275°).  Start checking them at around 18 minutes as these potatoes can become overcooked quite quickly.

If you make vegetable soup from scratch, add a few chopped purple potatoes which take on the flavors of the spices and add color and amazing nutrients to the pot.
