Tomato Soup

Ingredients

  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 medium onion very thinly sliced
  • 6 garlic cloves smashed
  • 5 cups canned whoel tomatoes in their juice from three 14-ounce cans
  • 1 cup water
  • 2/3 cup heavy cream
  • 3 tbsp honey
  • 1/2 tsp crushed red pepper
  • 1/4 tsp celery seed
  • salt to taste
  • freshly ground pepper to taste

Instructions

  • Cook the onion & garlic in the oils until tender
  • Add the tomatoes, water and spices and heat through
  • Blend in small batches until smooth
  • Add cream and stir
  • Serve with crusty French bread
