Tomato Soup
Ingredients
- 2 tbsp butter
- 2 tbsp olive oil
- 1 medium onion very thinly sliced
- 6 garlic cloves smashed
- 5 cups canned whoel tomatoes in their juice from three 14-ounce cans
- 1 cup water
- 2/3 cup heavy cream
- 3 tbsp honey
- 1/2 tsp crushed red pepper
- 1/4 tsp celery seed
- salt to taste
- freshly ground pepper to taste
Instructions
- Cook the onion & garlic in the oils until tender
- Add the tomatoes, water and spices and heat through
- Blend in small batches until smooth
- Add cream and stir
- Serve with crusty French bread
